Salsa Fresca Serves Up Fast, Fresh Mexican Fare In Danbury

DANBURY, Conn. -- After months of interior and exterior rebuilding on the restaurant and weeks of burrito-rolling boot camp for its employees, Salsa Fresca Mexican Grill has thrown open its doors as the newest food option on Danbury's busy Federal Road.

Conveniently located next to Stew Leonard's, Salsa Fresca is carving out its niche in the quickly growing fast, casual Mexican market. It serves up unique combinations of burritos, bowls, tacos, salads, nachos and quesadillas, all made with fresh ingredients that are prepared on site. 

"One of our founders moved back from San Diego and said, 'I can't get a good burrito here,'" says Marc Miles, a Connecticut native and one of four partners in the small chain, based in Westchester County, N.Y.

That quest sparked the idea behind Salsa Fresca, which in the six years since has opened locations in Bedford Hills, Mamaroneck and Yorktown, N.Y., with the next one under construction in New Haven.  

At Salsa Fresca, your meal is made to order right before your eyes. 

"A customers steps up and orders -- they can get a signature dish or create their own," says Miles. "You walk down the line and customize you go. We've created a theater, all the preparation is done right in front of the customer. You know exactly what is in your meal." 

And the options, all made from scratch and never frozen, as you build your own meal, include:

  • chicken, shredded beef, ground beef, pork, roasted veggies and rajas
  • add-ins such as Mexican or brown rice, black beans, queso, cheese, tomatoes, jalapenos, red onion, cilantro, guacamole, avocado and sour cream   
  • six types of salsa, from mild to very hot 
  • three sauces and two types of dressings

The menu also includes a kids menu and sides of chips, beans, rice and more. It offers vegetarian, gluten-free and dairy-free options for diners. And it offers a rare Boylan Fountain Soda, which dispenses beverages made with pure cane sugar. 

Salsa Fresca is also committed to the environment, using green utensils and packaging, installing energy-efficient lighting and recycling its cooking oil into biodiesel fuel.

In addition to Miles, the partners include John Tucker of Scarsdale, N.Y.; Seth Hirschel of Bedford, N.Y., and Dave Norris of Greenwich.
