Science Rules: 3 Chemists Brew Up 'Sweet Science' At New Norwalk Brewery

NORWALK, Conn. -- Who said chemistry has to be boring?

At Iron Brewing Company in South Norwalk, three chemists are mixing up  -- and serving up -- some pretty sweet science.

"The three of us brewers are all research chemists by day," said Shane Nunes, a brewer and general manager at Iron Brewing Company. "Being interested in beer came naturally to the three of us because of the science behind it." 

"Our profession entails formulating products and brewing was a fun extension of that."

After years of home brewing and sharing his beer with friends, Nunes, along with John Commander and Adam Letize, were approached with plans to develop a fully functioning brewery. Upon seeing the SoNo space, they immediately knew what their next equation would be.

"We felt this was the perfect opportunity, the three of us just being chemists that love to brew beer," said Nunes. 

The result is their new fully functioning brewery, open since Friday, Dec. 8, which offers a rotating array of eight in-house beers on tap at any time. 

"We feel we've made a beer for everyone. From light to hoppy to dark, we have it all," said Nunes.

"People can expect homemade craft beer made in-house that brings the flavor of a larger brewery.". 

Like the scientists they are, that means constantly experimenting with new flavors. 

"We're always open to customer input and even offers tours of our equipment to curious guests," added Nunes.

Although suds are the star of the show, Iron Brewing also features an enviable menu designed with beer in mind. Guests can expect pub fare with a twist, including onion rings battered with their very own draft to wings, burgers and more. Again, homemade offerings rule.

"We make most things in-house and always try to stay local as possible with our ingredients," said Nunes.

For residents seeking world-class beer in a comfortable environment, Iron Brewing Company is hoping to offer the perfect recipe. "We're ideal for people looking for a place where they can relax, enjoy themselves and have some truly incredible beer," said Nunes. 

And don't worry, you can leave the periodic table at home.
