Oysters Are On The Menu At Greenwich Food Fest Thanks To New Canaan Chef

NEW CANAAN -- Nick Martschenko, the chef/owner of South End Restaurant Group in New Canaan is all about oysters for The Greenwich WINE + FOOD Festival.

The Festival's Ambassador Chef will be serving an oyster pan roast with tasso ham and crawfish at the Ambassador's dinner Saturday, Sept. 23 along with lobster lollipops with chili lime butter and bacon salt, a dish served at his new restaurant, Uncorked.

Martschenko said he gets his inspiration from many places. Initially, it was his grandmother that got him started but now he finds his cooks and colleagues are always prodding him to the next level.

Farmers, too, play a part in his cooking style and influences. "Farmers are always sending me things each season that I have never worked with and we are always taking in whole animals," he said.

Though he'll be working the Festival on Saturday, Sept. 26, he said he and his team have just as much fun as the guests that come.

In other words, come hungry.
