Scrambling 'Egg-cellent' Meals At Bethel's Eggz: Fairfield Foodie Is A Fan

BETHEL, Conn. -- Magician Matt is like a sorcerer who, from his teeny-tiny kitchen, turns the everyday ordinary ingredient -- i.e. eggs --  into a variety of creative and finger-licking dishes.

You may know Matt Stanzack from his popular restaurant Stanziato’s in Danbury. A couple of years ago he moved on to strategize, conceptualize and realize his dream -- a food truck!

And on this Bethel-based food truck, he wanted to cook the very thing he loves to eat for breakfast, lunch or dinner. Welcome, in other words, to EGGZ Kitchen.

His delicious egg-centric dishes, which reflect local and seasonal produce, is created with great panache. Just reading the menu to see the list of ingredients in each entree makes my mouth water. 

One of my favorites thus far is the Sausage, Egg and Cheez Breakfast Sandwich with its uber-flavorful housemade chicken chorizo, over easy eggz, Vermont cheddar and awesome sauce on a toasted brioche. This perfection is oozing with yummy goodness! 

But oh then, wait! There's also the runny egg with that “awesome” sauce that drips down my fingers compelling me to shamefully lick it all off and hope that everyone who caught me in action will simply nod in approval at my actions rather than shake their heads in disdain. 

I'm also in love with The Crack is Wack Breakfast Sandwich, a soft scrambled eggz, goat cheese, crispy bacon, spinach and fig spread. It's the perfect harmony of textures as well as sweet and savory flavors. 

Last week, I went out of my comfort zone and tried the fresh Spinach Salad with its delightful feta cheese, organic strawberries, roasted almonds and balsamico. It is what summer would taste like. To turn this dish into a substantial meal, the salad comes with an optional egg on top (natch).

What more can I say except, “Matt, you got some Mad EGGZ SKILZ, man!" and I'm hooked.
